3 Questions with Eric Vaughn, CAESARS FORUM

Eric Vaughn is responsible for overseeing banquet and culinary operations at all Caesars Entertainment properties in Las Vegas. He successfully opened and operated celebrity chef restaurants including those from Gordon Ramsay and Steve Martorano. He earned a Culinary Certification Degree from Washburn Culinary Institute in Chicago. In his spare time, he enjoys completing home renovation projects and spending time with his teenage daughter, Josie, and his sidekick Doberman, Ivy.

What goes into your planning when you start to prepared meals for attendees?

Providing restaurant-quality meals is our signature. My background in high-end restaurants is particularly valuable when we are planning large events, as I take into consideration the logistics and, ultimately, the guest experience. Presentation and flavors are everything.

How has your approach to food and beverage changed through the pandemic?

With the pandemic, the supply chain has been greatly affected, and this is also the case when it comes to sourcing foods. We do everything to assure that we can deliver and provide an elevated culinary experience. We take into account seasonality, flavor, colors and preparation. There is real focus on incorporating wholesome foods.

What does it mean for you to finally be able to host a large event at CAESARS FORUM?

We have been ready since March 18, 2020, when the opening was scheduled. I am thrilled to be able to bring back the chefs that we had selected to be a part of this “A team.” I am excited to be cooking again and serving you.
